Just avoid Venice and Florence,there's no suburbs and people are used to live with tourists,they will be kind with you but it's their job !
Avoid Napoli, you'll be robbed it's just a matter of time.
Go watch football matches, calcio in italian, it ties rich and poor people and you can see the "true italian" .
Italy is very segmented , you can recognise the different accents of these regions to start understanding Italy :

Milano,Puglia,Sardegna,Calabria,
Toscana,Bologna,Alto Adige.
These are the regions to visit .
Watch tv shows with a broad national audience like Domenica In,(Rai1)Quelli che il calcio,(Rai2) and if you are interested only in young italians,Buona Domenica (Canale5) .
You can also attend Feste dell'Unità , I hate them but lot of people like them, they are barbecues and shows with political speeches, they are run by Democratic party.
The medium-italian is not the one who reads Corriere della Sera,but the one who reads Gazzetta dello Sport and Il Giornale.
You'll be here in summer I recommend Riviera Romagnola (Rimini , Riccione) very common people go there , you'll find also beautiful and rich people or tourists,from Russia for ex,it's a must see,no sorry it's a "must live" .
People from all Italy go there to have fun,from all regions.
Avoid places near mountains/hills they are not open minded people often.
