I usually just go to Florence as a day trip since it's only 2 hours away, but when I stay overnight, I try to book the Hotel Duomo which is next to the Duomo and close to everything. (It's around 90 euro per night). Any hotel in that general area is close to everything since the historical center of Florence is very compact and easily walked.

we rolled in to Florence a few years ago without a hotel and were refered to a cool place - I is was "Rleais La Locanda di Pinicchio" - suppose to be the where the Pinicciho story was written (but someone told me that was another city). Anyway - its a little inn - we had a great little two room suite with balconies. It is about a block from the Piazza witht the old open-air market with several great sidewalk cafes and close to the Duomo - link is below and according to yahoo hotels its only $51 a night
