Anybody kmows how to ake huevos rancheros?

Could it be served with white rice or colored rice?

The rice should be spanish rice but you can use whatever you like. I will include recipes for both. You can also buy prepackaged spanish rice to serve with the huevos rancheros.

Simple Huevos Rancheros
4 corn tortillas
1/2 cup cooked black beans mashed
4 eggs
1 avocado
4 tablespoons soured cream
1 medium tomato chopped
1/2 small onion chopped
1/2 clove garlic crushed
1 small red chili finely chopped
1 tablespoon chopped fresh cilantro
2 tablespoons lime juice
1 tablespoon maple syrup
4 tablespoons olive oil
1 unit drop Tabasco sauce

For the salsa, mix together the tomato, onion, garlic, chili, cilantro, lime juice, maple syrup, olive oil, and Tabasco sauce in a bowl and marinate for up to 30 minutes before using. Heat the vegetable oil in a pan. When hot, deep-fry the corn tortillas for 30 seconds, until golden and crispy. Transfer to a plate and keep warm. Heat a little more oil in a separate skillet and cook the black beans for 1 minute, over high heat, stirring. Set aside and keep warm. Finally, fry the eggs. Place a tortilla on each plate, spoon a generous portion of black beans on top, then add a fried egg. Scatter some diced avocado over each egg. Spoon a little soured cream on top, drizzle the salsa around, then season. Garnish with cilantro.

Simple Spanish Rice
Yield: 2 Servings
1/2 c green pepper,chopped
1 md tomato,peeled,seeded and diced
1/4 c finely onion,chopped
1 tb vegetable oil
1/2 c long grain rice,uncooked
1 c chicken broth
1/2 ts salt,optional
1/4 ts pepper

In a saucepan, saute green pepper, tomato and onion in oil until
tender. Add rice; cook and stir for 2 minutes. Stir in broth, salt if
desired and pepper; bring to a boil. Reduce heat; cover and simmer 25 minutes or until rice is tender. Yield: 2 servings

The way I make it is non-traditional, but here goes:

Ingredients:

1 can Rotel (I use store brand) diced tomatoes & chilis
1 can refried beans
Extra Virgin Olive Oil (EVOO)
Green pepper (If you like it hot, use jalapeno instead)
Onion
Eggs (use 2 per person)
Shredded cheddar cheese

In small pot, stir together the diced tomatoes and refried beans, and bring to simmer.

In skillet, heat 2 tablespoons EVOO, add chopped pepper and onion (to your taste), and cook until slightly browned, then add eggs and scramble.

Plate by placing the eggs on bottom, spoon some of the tomato and bean mixture on top and garnish with cheddar cheese.

I think adding rice as a side would be great, either plain or prepared Spanish rice.

Sometimes, I put the huevos in a flour tortilla for a wrap.

The way I make them, is I fry the corn tortillas soft, in other words in hot oil quickly, fry the eggs to put on top and add, tomatoes, lettuce, sour cream and salsa. Almost like a taco except with eggs I know that this is not the traditional way to do it, but this is the way I like it :-) And the way my Spanish grandmother would make them for us when I was little.

Huevos Rancheros are just 2-3 eggs over medium with a salsa of your choice or making (blended) on top of the eggs. Its the easiest meal ever. and its better with a spanish rice and beans and lots of cheese.

Fry a couple of eggs in a pan and when they are almost done pour red salsa over them and continue to heat them until the eggs are cooked all the way and the salsa is heated.

If you want to get technical you're supposed to use "ranchero sauce" which is a particular flavor of salsa with certain ingredients. Tomatoes, onions, green bell peppers, jalapenos, garlic, etc. But generally speaking almost any red salsa will work just fine.

requires eggs and lots of hot sauce...of the thicker tapatio variety not tabasco...and cilantro. So that it can be extremely spicy and unappetizing. The rest is a secret I can't divulge. I think the only thing worse than heuvos rancheros is that mexican soup people eat in the monring after hangovers..forgot the name... its has a reddish color.
