Well you certainly do not want to live in San Jose, Alajuela, Heredia, Puntarenas, Ciudad Quesada, Cartago, Limon or Liberia. However most of Costa Rica is rural so you have tons of choices should you want to be in a small beach town, mountain community or a farming community. You really have tons of options when it comes to country living or rural settings here are a couple that I think you might be interested in:
The southern Pacific has mostly small towns along the coast including Dominical.

if you really want to go to the boonies and live off the grid though you best head to Matapalo 30 km south of Puerto Jiminez.
Another good area would be down along the Nicoya Peninsula there are a number of beach towns that are pretty remote including Nosara, Montezuma and a few others.

Just a few other to keep in mind are for sure Monteverde and Rincon de La Vieja both of those have a frontier feel to them.

there are a lot of cowboys events in Costa Rica called Tope's where people ride bulls and show off their prize horses so almost no matter where you are in the country there will be a few of those every year. |

It's all a third world country... you get a lot of the same no matter where you go. Except for the cities... but stating you are a country boy pretty much excludes the cities. |
