Well, unfortunately pesticides are still used to grow fruits and veggies , so you might want to look into that. As for no meat, that is no problem. There are many seafood only restaurants in Costa Rica, especially in beach towns near the Pacific or Caribbean coasts. The water is safe to drink in San Jose, not sure about anywhere else, but buy bottled water instead. Just because the water passes the safety levels doesn't mean your body is automatically used to it. The food is good only if you like it. I've seen many foreigners get rashes after eating though, it might be due to the oil or something, buts its not anything serious. Costa Rican cuisine is big on the usual beans, rice, and tortillas. Its humid everywhere, but more so depending on what area you will be in. Towards the end of March the weather is the hottest and driest of the year.

As for advice, i tell this to everyone who visits anywhere in Latin America. The most common type of crime is petty theft like pickpocketing, specially in very touristy places and San Jose in Costa Rica. Don't flash fancy cameras, jewelery, money, ect and use common sense. Also, don't expect to arrive and see perfection, many people overdo it and try to paint a perfect picture of Costa Rica, its fair to keep in mind it is still a 3rd world country, as the rest of Central America is, sadly.

Well, I'm costa rican, so my answer may not be so influential, but here you can eat almost everything, Fast Food rests as McDonald's serve salads as in the States. If you want some kind of meat or food, just ask to the waiter if they have that kind of food in the restaurant. Tube water is potable, but I recommend you to mix bottled water with tube water so your metablism get used. In march , weather is warm, because dry season (summer) is hot on mornings but sometimes nights get really cold. All depends where you come from and how is the weather on your city.

My husband and I were there last month. We stayed at the Flamingo Beach resort right on Flamingo Beach.. It was great! The food was good... Some looked kind of scary for me to try but my husband did and then convinced me to and it was excellent! Did not have a bad meal the whole time we were there.. If you get a chance.. You have to have their Honey Dew juice.. The best in the world!
I did not get very sick.. I think it just took my body a couple days to get used to the change when we got there and about a week after we got back.. Nothing serious though.

the food there is not exceptional, but is good in that it is rather basic, if you cant eat meat, good because the meat there is not that great anyway, you can order a fish casado (a casado is their traditional dish) which is basically fish with rice and beans and usually a fried plantain (so yummy) their breakfasts usually consists of guyo pinto (rice and beans from the previous day all mixed together, another favorite dish of mine) eggs, usually scrambled, cheese, and a couple of tortillas to wrap it all up in, so no meat there, hugo naturals which are basically a smoothy except they don't put yogurt in them, they are just pure-ad fruit and, if you want you can ask for ice (con helo), they will put sugar in them unless you say not to, but the result is great!

Costa Rican cuisine is good. One of my favorites is Ceviche. It is either white fish or seafood marinated in lime juice and spiced up with some onion, garlic, red peppers and coriander.

Lots of really great FRESH fish near the seas. Lots of Civiche which is raw fish marinated in Lime juice which actually causes the protein to "cook".

And the water is potable if not drinkable everywhere. Always ask but 97% of homes here have potable water and that is local, not tourist areas. My boyfriend is Tico and he laughs when I buy bottled water because this country has such a large abundance of fresh water.

Truth

Where I was there was mostly beans and rice. So it should be OK.
The water is drinkable from the tap, but not always from streams.
Winter is from Dec to June (I think) the wet season. In the wet season it rains nearly every afternoon, but the mornings are dry.
