You can pay any time of money. You can pay with us dollars and cordoba

You can pay with Nicaraguan money, US dollars or most credit cards. Euros sometimes are accepted but not as widely as USD. I can't imagine why you would give your PIN to a desk clerk.

All invoices will be in Cordoba. I'd use cash if they accept it and you have the extra.
Otherwise, use a credit card. I've used it worldwide and never had a problem - naturally, my PIN does not "go anywhere", because you only use it to make withdrawals at an ATM; and there I use bank ATMs only.

For credit card payments, no pin is needed, unless you have the newer CHIP card, in which case just watch that the card reader is in your view only, and cover with the other hand.

For the old style cards, just never let them out of your sight and make sure you get it back and it's yours! Check! This applies everywhere, not in only in Latin America)

some info on these new cards (new to us, not new in Europe) is in the link below.

I am from Nicaragua and I would not trust anyone there with my credit card or debit for that matter. Use cash only.

Cash is usually the easiest way to pay for hotels in Nicaragua, for other travel tips in Latin American, I use Viva Travel Guides, they have up to date and accurate information.
