Gosh, there is so much to write about. I have a book right here, "The Taste of Colombia", which organizes the cuisine by region:
Carribean Coast and Plains
Santa Fe de Bogota
Gran Cauca
Antioquia and Viejo Caldas
Cundinamarca and Boyaca Antiplano
Santander and La Guajira
Tolima Grande
Orinoquia and Amazonia
Of course, you could very easily just write about the wide variety of fruit from our country. Among our fruits are:
Orange (Naranja), Ciduella (plum), Manzana (apple), Curruba, Chirimoya, Guanabana, Manago, Azucar Mango (sugar mango), Zapote, Banana (several varieties, including small ones and pink ones), Mora (raspberry), Fresa (strawberry), Lulo, Maracuya, Mamonsillo (sorry, I'm sure that's not the right spelling), Uchuva, Uva (grape), Grenadillo, Kiwi, Nispero, Pitaya, Tamarindo, Feijoa, Breva (fig), and many others.
Just to name a few dishes I have eaten in Colombia, which you should be able to find via google search:
Churrasco
Sobrebarriga (Flank Steak)
Papa Criolla (a small yellow potato)
Carne Llanero (beef from the plains (los Llanos))
Mute (a type of soup from Santander)
Ajiaco
Lechona (pork, like the kind you get at a pig roast)
Trucha (trout, a common dish in Colombia, prepared in a variety of ways)
Venado (venison) - not too common, but I've had it in a few places
Bandeja Paisa (a traditional dish from the Medellin area)
Hormigas Colonas (a type of ant that is roasted and eaten in Santander, litterally "Big *** Ant")
Tamal (a corn meal, chicken, vegetable mix steamed inside a banana leaf)
Ajaca (similar to a Tamal, but prepared around Christmas time, also from Santander state, but with raisins in it. very good).
Bagre (another type of fish).
Platano (cooked Plantains, prepared in a variety of ways).
Tomate de Arbol (literally, "tree tomato". not a dish, but i just thought i'd mention it).
That's all I can think of at the moment.
Forgive me for some misspellings, I'm not a native Spanish speaker. Just a frequent (20 + trips) traveller to Colombia.
** Agree with Bogota Co below on the blood sausage. I'll eat almost anything but, yuck, I hate blood sausage and avoid it like the plague. |

Shelby had some good Ideas. Hard to make Ajiaco in the US. The spice is called Guascas.. Ive not seen it here.. but I do bring it back with me. The food in Colombia is terrific. I love the Arepa Costena.. Its an Arepa with an egg in the middle. San Cocho is good, caldo de res is good, mojarra is good, bagre is good, boca chica is good, any of the lomo finos are good. The patacon is good, The blood sausage is awful.. The fruit is wonderful.. |
