Well Manta is kind of small city for Ecuador. Lots of social things to do since it's got a beach and port. It's new port promises to be an engine for economic growth for the city with many new opportunities for international business. The goverment even says it's gonna be one of the best ports in Latin America.
Other than that, there's a lot of fishing and delicious food. Don't expect big malls, stadiums (soccer), mcDonald's or concerts. Manta is kind of a small touristic city.
