You can make Arroz con pollo. All ingredients are easy to find in the USA.

Here a link to authentic Panamanian food. Cuquita Arias is the best. Look on the top of the page for the word RECETAS and pick what you want. If you need more help let me know I am a chef.

You could make pata cones as a side dish. they are pretty easy to make, but you need a lot of counter space and a big pan

4 NOT RIPE plantains (they should be very green)
cooking oil
salt

the best way to peel them is to cut the bottom and top part off, then slice it lengthwise just enough to pierce the peel. you don't want to slice through your entire plantain. when peeling
then gently peel it back with your fingers.

you take your plantains (make sure they are very green) and you cut them in about 1 inch slices

fry them in oil just enough to make them a little soft

then take them out of the oil, and flatten them out to about half their height. not too flat, or else they will fall apart. the bottom of a jar, or the bottom of a can works well to flatten them

then put them back in the oil and fry until golden and add salt

here is a picture of what they are supposed to look like
