Foods of Latin America:
a. Mexico: tacos, enchiladas, chilaquiles, tortillas, cajeta.
b. Guatemala: tostadas (fried tortillas with salsa or beans), tamales, jocom (chicken with green spicy sauce), pepian (meat with spicy sauce), subanik (pork with spicy sauce), kakik (wild turkey with spicy sauce)
c. Honduras: sopa de caracol (Snail soup), baleadas (tortilla with eggs, beans and cheese).
d. El Salvador: pupusas (corn tortillas filled with beans, cheese, etc.)
e. Nicaragua, Costa Rica: gallo pinto (rice and beans), foods made with plantains.
f. Panama: seafood.
g. Peru: ceviche (raw fish), suspiro limeno (dessert).
h. Argentina, Uruguay: asados (barbeque).

Ok you ask a lot of things. Ill try to answer as much as I can:
Latin America is not one country, but a lot of them, including the caribbean, a lot of different cultures and so a lot of different food. a lot of climatic conditions, so a lot of different products to export.
for example, argentina, uruguay, they eat a lot of meat, grilled and they produce a lot of leather and they produce Dulce de leche, belive me, really good.
Im from dominican republic, we produce sugar, tobbaco, and a lot of other things, like now, we are starting to produce and export organic vegetables.
tipical food here: Sancocho, is like soop, with meat in it and some vegetables, and potatoes, and other things.
Mangu: Mashed bananas
among other foods.
we celebrate a festival in february, our carnaval at La Vega, one of our cities.
in latin america I can also mention very famous brazil's festival.
music: Tango, either from uruguay or argentina (They say gardel was from uruguay, not argentina but who knows)
Merengue from dominican Republic, and bachata
Milonga, music from argentinian Pampas
Son: from cuba
Samba: From Brazil
Cumbia: from colombia
Salsa: from puerto Rico
