The only dish I would think of that you can make in any part of the world is AJI de GALLINA.

You bake potato and let cool off then make slices 1/2 inch thick. To bake potato just put them on boiling water until a toothpick can penetrate it with ease (google for some recipes and see the time it takes), the bigger the potato the more time it needs so try to use potatoes of the same size.

Make white rice also. Someone in your house must know how to do it.

I never cooked it in my life because I never had to, but this tasty dish was invented by black slaves trying to to make the most out of the leftovers given to them. While the rich landlords ate the best part of the chicken leaving only traces of meat, the slaves used those traces then added bread and milk and spiced it with yellow chili peppers to make a soft paste of spicy chicken and covered slices of baked potato with it and rice on the side. Thus appeared the famous Aji de Gallina, now perfected with greater amount of chicken meat and soda cracker crumbs, half baked egg and a black olive on top:

http://2.bp.blogspot.com/_phQo8nEmFa0/SGB2wNMPwmI/AAAAAAAAAKE/RHen-qVr7t8/s400/rocoto_relleno.jpg

It's really simple because the rice is made on one side, the egg is baked on the other, the potato is baked also, the black olive goes on top and the main ingredient is cooked as follows:

Directions:
Boil the chicken in salted water. Remove from bone and break into bite size pieces. In a saucepan heat the oil and fry the onion, garlic and chili peppers, salt and pepper to taste. Fry until golden and add the bun bread which has been soaked in milk (half & half), having removed the crusts (not necesarily because some people even add crushed soda crackers). Cook slowly for 10 minutes then add chopped nuts, parmesan cheese and chicken broth. Two or three minutes before serving add the evaporated milk.

I found many recipes but many have stuff like tomatoes????? Just look for the simplest ones with the ingredients I've mentioned (you can skip the nuts if you want, that's just a gourmet thing)

The chili peppers used in Peru look like these:

If you use fresh chili peppers (the orange ones) take out the seeds and internal whitish veins. If you have problems finding them, just buy a jar of chili paste but not too hot, medium or mild would be fine (this is not a hot spicy dish).

Put 2 potato slices on a plate then pour the Chicken spicy paste on top of them, then the rice on the side and garnish with half backed egg and one black olive.
Bon Apetit!

Leche Asada. (roasted milk)
It's a simple custard dessert, that should take you about 10 minutes to prepare, and about an hour to bake. There are many recipes for it that include various spices, lemon zest, etc., but this one is simplest.I tripled the standard dessert recipe, figuring on a large group.

Make it the night before and chill it in the refrigerator overnight - should aim to have it just cool by class time.

3 cans of sweetened, condensed milk
3 cans of evaporated milk
3 cups of sugar
3 tsps vanilla extract
2 dozen eggs
3/4 cup water

1. For the custard: Preheat the oven to 400 degrees, then mix up both canned milks, Half of the sugar, the vanilla, and the eggs in a big bowl very well, until it's all the same color and consistency. Take out a baking dish (preferably a glass dish) and have it ready near the stove.

2. Now, Make caramel : in a saucepan over medium heat stir the rest of the sugar with the water until it's a golden/brown color and thickened like pancake syrup. Keep stirring while the caramel bubbles, and be patient. This takes several minutes.

3. When it looks like it has a nice color, carefully pour the caramel into the baking dish. Wear oven mitts for this step. If the caramel splashes, it can burn skin like crazy. Put the saucepan in the sink right away and get some water in it to soak while you're doing everything else, so the pan won't be impossible to clean. Now, gently pour the milk/egg mixture on top of the caramel.

4. Now you need to make a "water bath" to bake the custard in, so it cooks gently and evenly. The water goes OUTSIDE the baking dish, not touching the custard. Wearing your mitts, Pull out the center oven rack halfway. Take a big, empty baking pan or roaster and put it in the hot oven. Put the baking dish with the custard mixture inside the baking pan, in the center of the roaster. Before you push the oven rack in and close the oven door, use a pitcher of plain hot tap water to fill the roaster until the water is halfway up the outside of the custard baking dish. Carefully cover the whole shebang -both the roasting pan and the baking dish tightly with sheets of aluminum foil. Now push the rack in gently, close the oven door and let it bake for about an hour. Start checking after 45 minutes. You want it to be set, and quite brown on top.How long this takes will depend upon the size of the baking dish you use.

As above, chill overnight. You can serve it in plastic cups to your class. Good luck.
