It depends I am from Nicaragua and although Nacatamal and Vigoron are part of our cuisine we really dont eat them for Christmas... at Christmas we eat Gallina Rellena and not Nacatamal or Tamal.... some people would cook pork or someother fancy food.

Usually they eat Nacatamales which is a Nicaraguan version of a tamal, they also eat a plate called vigoron which is a tortilla with some yucca, pork rinds and some cabbage salad.
You will also find Pinolillo and Chicheme which are natural typical drinks.
