I think the procedure is pretty much the same as any other place of western culture in the world.
Person dies, people call a funeral home, there usually is a wake (at the funeral home) and, the next day, the person gets buried or cremated (as his/her wished were).
If the person's death is related to a crime or accident (like an MVA) the body can't legally be cremated, it has to be buried.
Now, depending on the person's religion this might be different. But this is mainly it. Considering most of Latin Americans are Catholics, then you'll have 9 days of mass honoring the person.

Latin Ameirca is a big place - by "standard procedure" do you mean cultural practices or legal paper work/procedures? - You would need to mention the country - legally each country would have its own procedures - this applies to all the countries of the world...
