I understand what you're going through. It seems that to some people, the whole Spanish speaking world is Mexico...
You could change your lingo and use caliche, but when people ask you what language you speak, you will inevitably say Spanish, which they will automatically associate with Mexico.
A better option would be for you to educate those you speak with and make that mistake. Let them know that there are 22 countries in the world that speak Spanish, including some in Europe and even Africa!
Let them know that Spanish is the third largest language spoken in the world (Mandarin and English are the first two).
And finally put it in perspective. When they make a comment like that, tell them it's like saying that those who speak English are all Americans. Maybe that will knock some sense into them.

Use the Yahoo Spanish-English dictionary. This is good to learn vocabulary, not good to learn verbal conjugations.
If you want to practice your Spanish talk with people who speak it. It's the best way to practice.
La mejor manera es que platiques en espanol con personas que lo saben hablar bien. De preferencia nativos de paises latinos.
If you want to learn Salvadorean "caliche" talk with Salvadoreans like me hehehehe...
Here in US we face the same problem, Americans think that Mexicans are the only people who speak Spanish. I hate when people get confused with my nationality. For these reason, I use a lot my Salvadorean caliche to make them understand I'm not Mexican....
