The only way you are going to swim with dolphins is in a contained area like an aquarium, as Tico Roots mentioned. Or "maybe' if you go fishing and/or take a boat cruise (and a few miles off shore) and see a school of them, you may be able to jump into the water. However, do not expect much action since the dolphins are wild and you may poise a threat to them as they swim pass you at lightening speed.
Your best chances are swimming with a whale shark, a awesome experience and CR has a lot of them. Whale sharks are not the "man-eaters" as many believe. They are actually quite gentle and can be playful with divers. A year ago I took my kids to CR, and when fishing one day the captain of the boat spotted one sunning next to a large floating branch. He stopped the boat and my kids jumped into the water (and so did the captain), the next thing you knew they were cruising and playing with it for almost an hour. It was a once in a life time experience. Your best bet is to contact a few Scuba Diving Clubs and email them of what adventure/diving tours they have. Some of the places that have unreal diving are Drakes Bay, Cano Island, Playa del Coco and Ocotal.

I don´t know of any place in Costa Rica that you can swim with the dolphins.
There are many places to swim like beaches, rivers and pools .
Just not many dolphins.
But I´m sure you´ll have a great time.
