I just stayed in the Catalina Riviera Maya resort outside of Playa Del Carmen last June. The resort was wonderful! It had a great beach, 6 restaurants, 2 swim up bars, and 4 pools. They also offered lots of activities during the day.
I booked through Apple Vacations and they made everything soo easy. They have representatives for you at the airports so they can make sure you get to the right place.

Try the mayan riviera (CancĂșn, Playa del Carmen), there are very good all-inclusive resorts over there and the spot is simply gorgeous!

I have always liked the Riu Resorts, but they are more family style resorts. I don't know if you have kids or not, but I'm guessing that for your anniversary you probably will just go as a couple, so you may want to try an Adult resort like Temptations in Cancun. Both Riu & Temptations are all inclusive resorts.

We just stayed in Dreams Cancun with our 2 sons, it was perfect and the location is great, one beach is a pool and there is other private secludes beach amazing (we stayed 8 days and pay like$2800 for everything I mean hotel, flight is extra), the food I can't complain really I enjoyed very much, but we have kids and you don't so maybe if you want to avoid kids noises (we don't mind and really nothing to complain not too much kids we saw) you may consider others adult only resorts. If you like slow paced vacations I love Isla Mujeres is located in front of Cancun, Playa Norte is paradise period. :)
