Wow! there are so many options as the country is big with a variety of wheather conditions from deserts to beaches on the Pacific, Atlantic and Caribbean, from mountains and volcanoes to jungles....and the culture is rich with prehispanic (aztecs, mayans, olmecs, etc.) colonnial, independence, consitution, revolution, modern periods.

For me it would be the volcanoes of Popocatepetl and Iztacihuatl, they are side by side the Popo with a stress on the first syllable (as otherwise would mean poop) is an active volcano and the Izta has the shape of a sleeping lady on top. They are located near Mexico city.

There's a romantic story about them, it says that the Popo was a warrior that wanted to marry a beautiful Mexica princess, but he had to go to war first, when he got back he found that she took her life to avoid marriege with another man. He took her body to the top of the volcano and kneel before it, and stay like that for eternity.

Popocatepetl means the smokey mountain
Iztacihuatl means sleeping lady

What about a Sahuaro in the dessert, a Sahuaro is a cactus, look for Kino Bay in images and you will find something nice.
Mexico is so big that you can find all kind of environment, weather, landscapes, etc. we have woods, forest, beaches, desserts, island, prehispanic culture vestiges, pyramids, borders... Hot, warm, cold, heights, you name it

Mmm... I'm thinking about the natural biodiversity of the place, which is huge. Deserts+Forests+Beaches+Prairies+Snow-co...

Find a picture of the Mural at the Castillo de Chapultepec. The one surrounding the Main stairway is awesome and depicts the history of the nation.

Edit - The next poster and I are referring to the same Mural! There are 3 panels, a huge central one, and 2 slightly smaller ones on the side walls. Just had the wrong building.
