I wouldn't bother to change pounds into dollars for Mexico. If you do that you are going to pay to convert your money twice.
When you are in Mexico, you are going to get the best value if you spend pesos. Now you are not going to want to be walking around the UK with a bunch of left over pesos so I would recommend getting a few USD in cash for the airport and for the first day but after that just go to an ATM and use your bank card to withdraw local currency as you need it. Use your credit card to pay for excursions, shop and for hotel/wedding expenses.
It is true that the US dollar is widely accepted but again, if you are spending USD in Mexico merchants are not going to give you a good rate. If you want to spend US dollars you are going to pay about 10% more for everything.

Take most of your money in travellers cheques. Your travel agent or holiday operator should be able to advise you. Do not get the pescos off them it works out more expensive and changes day by day aas do all foreign currancies

Go to http://www.x-rates.com/. Select to graph American dollars vs. Mexican Pesos. At the moment pesos are increasing in value vs the dollar.
