Walk by the malecon at night, just spectacular.
Visit the bars and discos by the malecon.
Get a little boat to take you to Los Arcos (The big rocks) to snorkel.
Swim with the dolphins.
Go to Punta de Mita and get a boat to take you to the Marietas Islands. You can snorkel through the caves and get to the interior beach of one of the islands. Turquoise water and white sands.
Get a Canopy tour.
Go to a beautiful beach and just rest, rest, rest, in the spectacular beach of Conchas Chinas, Las Estacas, Garza Blanca, Destiladeras, Yelapa, Quimixto, Las Animas, etc.
Experience the second gourmet destination of Mexico with some of the best restaurants in the world.
Go to the Art Walk, once a week.
Go to Yelapa beach by the water taxi.

Do the Dune Buggy tour with Tequila tour. It is a blast. It was the best time we had. Go to the Marina at Marina Vallarta. Great spa services cheap and terrific resturaunts. Go downton shopping and the flea market down town. If you've never done swim with dolphins or sea lions, it is a must do as well. Also the canopy tour is incredible.

There are many things to do in and around Vallarta. Parasailing, banana boat rides, bar hopping along the malecon and shopping. But if you want to see deserted beaches and old Mexican towns and snorkel and learn to surf you can hire your own native Vallartan as your private guide. His name is Pedro and his e-mail is bpascuales@yahoo.com.mx. He works on the beaches at the Holiday Inn.

I went on a work trip which was mostly fun but had events, dinners, and bars all planned out for us.

For food:

Trio was very good, we had the 3rd floor all to our own group which had a raised balcony/platform that gave unique views of the downtown area; http://www.triopv.com/

But even better than Trio is Cafe' Des Artistes. Whatever you do, make sure you visit this place for dinner! The food was AWESOME, the decor was unbelievable. One of the persons in our group said their parents (who are world travelers) rate this as the best restaurant in the world. I thought that was a pretty bold statement until we finished dinner...lol; http://www.cafedesartistes.com/

Things to do:

besides laying at the pool...lol

we did some group snorkel cruise, I don't have a name or anyting but you can go to the marinia to sign up for these. The one we took was about an hour boat ride to some private cove. It included snorkeling but you could also kyak, go on a nature walk through the forest, and learn to make papaya at no extra charge. For an additonal charge at the cove, you could also go scuba diving or get a spa treatment. We were there for quite some time, about 5-6 hours. Lunch was also included. You could also lounge around on the beach. They had these hammocks set up all over the place, I almost fell asleep in one.

Cool Bar

La Bodeguita del Medio is a really cool place. It's a restaurant (didn't eat there) / salsa bar on like the main street. We ended up in that place every single night and made friends with the locals eventually. They had a live band and everyone was dancing. Oh did I mention that you can write anywhere on the walls, just ask for a marker from one of the bartenders or bring your own. There are so many messages from our group.
