I think the green is for guacamole...

White is for melted cheese...

And red is for salsa.

The mexican flag is really just a close up photo of somebody's taco salad.

pink
green represents courage, white hope and red the blood from the heroes that achieved Mexico's Independence. The eagle in the middle is standing in a 'nopal' (mexican plant) and eating a snake, this was the sign that the indians who founded what now is mexico's city were looking for, that's at least what the leyend says: the king of the 'aztecas' (indians) had a dream in which one of the gods told him to llok for this sign, and when he found it he had also found the place in which he was going to build the city

The colors used to mean:
Green-Independence from Spain
White-Religion(Catholic)
Red-Union (between Europeans and American)
Now:
Green-Hope
White-Unity
Red-Heroes' blood

Dan
GREEN: The courage that mexican fighters have had
WHITE: The hope
RED: The blood spilled by the heroes of the nation
THE EAGLE IN THE MIDDLE: It's the sign that the "Tenochtitlanos" were waiting to found their main city. This sign was given to one of the gobernors as a dream by one of their Gods
Hope it helps... have a nice day!!!!!
