Last year I stayed at GR Royal Solaris and loved it, it was away from all the tourism and about 10 minutes from downtown. The beach was just across from the pools.
Hope this helps

I just stayed at the Le Meridien in Cancun and it was beautiful. It's considered a "boutique" hotel and therefore isn't as huge as some of the others on the strip. It has about 200 rooms and excellent service. It's situated between the Ritz Carlton and the JW Marriott and since it's smaller the pools and beach don't get as crowded. They have a beautiful 3 level cascading infinty pools with different temperatures in each pool. There aren't any kids on spring break who stay at his hotel. The pool service is great, they also bring free mini frozen fruit coolers and fresh fruit to you periodically throughout the day.
