Which Mexican city is the best place to vacation?

Also NOOO tourist-y spots please! No Cancun's!
Additional Details
Me and my husband need help decided which city in Mexico would be the best place to go on vacation. There are tooooo many options to choose from and research when I try googling vacation spots in Mexico.

We are both very adventurous so mountain biking, kayaking and hiking in the jungle would be our thing. We don't care about night-life. I love nature and animal/bird-watching. History/ruins would be good. He speaks fluent spanish and so we can get off the beaten path a bit if needed. And we don't care for a big expensive hotel - we are there to experience the city - not the room.

Suggestions from those that know the cities would be AWESOME!

Merida is spot on!

The city is large enough to offer a good range of hotels, restaurants, airport access, etc., but it's definitely *OFF* the beaten gringo tourist path. It's close to DOZENS of excellent Mayan archaeological sites, including some that get few visitors (but also within range of Chichen-Itza, which *IS* on the beaten path, but so freakin' cool that you should check it out anyway).

Great opportunities exist for the eco-traveler too. Celestun, the coastal areas, the jungles. Check into Merida and I think you'll like what you see...

You might want to try Merida, it's on the Yucatan peninsula and has all kinds of historical mansions, I think they were really rich from the rubber trade

Here's option one:
Click the first link ans follow the adventures of some hiking buddies from the Lake Chapala area of Mexico. First they go to the Ixtapa/Zihuatanejo area for some beach hiking. Ixtapa/Zihuatanejo is sorta touristy, but not the way they did it, staying at Angela's hostel. Then they went of to Uruapan in the state of Michoacan to hike the Eduardo Ruiz National Park. You can read the rest of their hikes and adventures to see if that's something you might want to do.
Option number two:
Get lost on the Costa Maya not far from the town of Mayahual. Click the second link to read about the Maya Beach Garden. It's north of Mayahual and right on the edge of the Sian Ka'an Reserve--you can hike all over this jungle reserve. Mayahual get a little crazy when a cruise ship pulls in, but the Maya Beach Garden is far enough away that it's not affected. And not many tourists come down the Yucatan coast to Mayahual.
Option number three:
If you want to see a lot of Maya ruins, fly into Cancun and rent a car and circle the Yucatan peninsula. Read my response to another Yahoo question in the third link.
