Hey depending on style of ring you want there are plenty of shops.
Try Gold ore silver mine, left bank (Off cuba mall) Have a large selection.
There is a very nice jewellery store at the top of Dixon Street (Just along from device).
There is also a couple more ring shops on Cuba mall (I think that it is called rings n things or the Ring Company, it is located almost opposite left bank.
Otherwise head up Lambton Quay as there is tons of jewellers along there.
