I'd offer my services as a trip consultant at a minimal cost, however it seems a bit premature.
Considering the economy and the devaluation of the Kiwi dollar, it is a crap shoot whether any travel estimates you get right now will be anywhere close to the cost in 2010.
I don't know where you are coming from (US?) but you might get lucky if the Kiwi dollar stays low. Right now the US dollar is worth about $1.70 NZ, which means you get a great deal on hotels, train trips, ski packages, etc.
But there is no guarantee that the Kiwi dollar will remain low - personally I'm hoping it will climb back to it former rate and regain some value before I have to make my pilgrimage to the USA.

A package tour would give a fixed price - otherwise work on a daily rate, based on the level of accommodation, a rental car and how often you eat out ( buy breakfast cereals and make a packed lunch versus three meals purchased per day).
I would estimate ( NZ dollars ) for 2 people at budget rate:
Backpacker type double room - $50
Car - $50 daily rental
Main meal $30
Add $70 for everything else - petrol. lunches - $100 Nz each per day
Bungi jumps, jet boats and other tourist traps are additional to this.

Thats really cool! Well, if youre a student you can try EFTours, but you have to go with a group of people that you organize. Then there is STAtravel that helps you organize your destination. The last one I would suggest is InterExchange.org they have certain programs for New Zealand like http://www.workingabroad.org/intern/internship-new-zealand.html and http://www.workingabroad.org/work-travel/work-travel-new-zealand.html. The only one of those sites Ive had experience with was EFTours when I went to England in July 07 with a teacher and other students. Hope this works for you :) Id love to go to New Zealand!
