I had 5 days there myself....I had a night in Dublin and then hired a car and drove for 4 days, to Kilkenny, Cork, Limerick and then back to Dublin.
I drove over 1000km and at the end of it I was rather tired! I loved the Dingle Penisular as thats where some of my relatives are from, but it had a few...wow moments. I decided not to do the Ring of Tralee..or at least I think thats what I think it was called, but its the next prenisular around from the Dingle.
I went to the Rock of Cashel and an old monistary....not sure of the name but I later saw a picture in the Lonely Planet of exactly the same photo I had taken from the monistary!
I would have loved to have seen more....I recommend Cobh ( pronounced cove) near Cork which is very pcituresque.
I found the roads like here in NZ...not expecially wide, a bit windy same speed limit. THere are a few highways ,but I was not on them much.
I would say there are lots of pretty sights but I have to say I wish I had seen more expcet the roads! I drove a lot and while I got to places I wanted I needed more time as it took me longer than I thought it would.

The Cliffs of Mohr on the west coast are spectacular and the little village of Adair near Limerick is very quaint. I wouldn't bother with the east coast too much. Cork itself is great.
