As chicken takes a while to cook it is best to pre-cook it a little by either placing on an elevated wire cake rack in a covered cooker and steaming for about 15 minutes (not sitting in the water) to steam it, then let the water droplets drain off and pat with apaper towel till dry to stop oil splatter. A pressure cooker works really well and ensures the chicken remains moist. Then preheat soya oil to 180 degrees and cook for anout 7 minutes then stand on rack or paper towel to drain oil. The result is perfect chicken thats nice and moist that is far better than KFC
