It would help if I knew what you wanted to do and what your budget might bare. The possibilities are endless and the cost can be as little as a donation to thousands on the high end.
If you have time you can contact the New Zealand tourist office

You should tell them what you want and you budget and travel dates. They will actually develop a travel plan for you. After your there you can also go to the local office and they will help too. Everyone I have met there seems to be really helpful and enjoy their work.pp

I recommend renting a car and obtaining a good quality map. Rent-A-Dent (I know the name is silly) is a GREAT car rental company. Good, simple cars that are reliable and cheap ($100nzd for 10 days). They won't have any hidden fees or crazy charges.
From there some cool places are:
Northland is usually nice and sunny with great (secluded) beaches)
Auckland is really crowded.
Coromandel is beautiful and coastal.
Rotorua is a tourist trap but a really fun and nice town with amazing geo-thermal parks that are worth seeing. Also, there are some overlooked lakes surrounding Lake Rotorua which have nice casual hikes around them.
Lake Taupo is nice, good fishing.
Tongariro/Rhuapehu is great if you have time to hike the circuit.
Wellington is a FUN town. I don't care what anyone says, I always have a great time there. Great pubs, bars, food, Te Papa Museum, and so on.

On the south island, Abel Tasman park is my favorite. Secluded in the shoulder seasons, great hiking and camping. There are some facilities inside the park, research options first.
The of course there is the Queenstown and Milford Sound adventures.

For accommodation, this time of year you're safe without reservations. I suggest staying in "holiday parks", which are fancy campgrounds. They have camp spots for tents, RV spots, and cabins, small apartments and so on. They're super cheap and it's fun to meet other travelers and kiwis.
Runs about $20-60nzd per night.
Super friendly people in NZ, be open and you will meet many nice people!
Oh, and for food, expect to pay approx. $10 nzd per meal IF you're lucky, if you buy your own food to make it's cheaper, which is nice about holiday parks as they have kitchens in room or for community use.

it depends if our going to the south or north island. if your going south you must check out queenstown. they say its "the adventure capital of the world". north island check out taupo
