Sorry but I dont know of anywhere in New Zealand that will guarantee skiing in May. Some of the skifields have been known to open in late May but my understanding is that this year June is the projected opening date (e.g. in the South Island, Mt Hutt - June 10; Coronet Peak - June 10; The Remarkables - June 24.) The North Island ski fields tend to open after those in the south. Even the heliski companies up at Mount Cook seem to be offering trips from June only.

Well There's good news for you!
If you decide to go during may make sure you go by the end of may where the ice is just ready for skiers!
The ski filed is at the southern islands of New Zealand, the place is known as Mount Hutt one of the best ski Fields in all of New Zealand and finest. If your a more advanced skiers many website would recommend Ohau and Dobson. I hope this answers your question and there is more in the article if you need. From my experience i would definitely recommend you visit Queens-town its the best place to go and ski.

Yes. It will be the begginning of their winter. South Island is the place to go as it is cooler. The mountains arround mount Cook have snow throughout the year. If you go down the West coast you can get a helicopter to take you onto the Franz Joseph Glacier.

It snowed last night in the Christchurch area. Don't think you will have to travel all the way south to find skiing!
