One of my favorites attractions is the Antartic Centre. It's really close to the airport (so if you are flying you can do it on your way out) and worth visiting . Specially the 'windy room' (no more details because I don't want to spoil the surprise!). You also learn a lot about the South Poll.
Then in the city you have the Cathedral Square. It's the first Cathedral in New Zealand. From the square you can go walking towards the botanic gardens, which is also very nice. Opposite the gardens you have the Art's Centre.
I'm sure you'll keep yourself busy!
