It really depends what you are into.. My friends & I just completed a road-trip & some of our fave things wre: Classic comedy in Auck, Zorb (that round plastic ball that they put you in & u roll down the hill. sounds weird but awesome fun) & buried village in Rotorua, vineyards & marine parade in Napier, any watersports in Taupo & Te Papa in Wgtn. Feb is summer so there are heaps of outdoor concerts & events - just check out what is on on the days that you are travelling. Also Feb is sevens month in Welly so def try & check that out if you can! Have a blast! :)

Auckland is excellent for night life (though sometimes a little pricey). I would recommend you visit Waiheke Island for a day there, or climb Rangitoto. And they have good shopping but you probably don't care about that! Oh, and if there's good bands coming to NZ, they'll probably be in Auckland, so definitely check what's happening at the time you'll be over here.
Hamilton... well no offence to any Hamiltonians, but as far as I hear it's a bit of a whole. I don't know what there is to do there.
Rotorua has a lot of cool things to do. There's the zorb, the luge, visiting the natural springs and mudpools and stuff. You can also do white water kayaking.
Taupo - visit the gigantic lake. I think you can bungy jump there too and that's meant to be quite good.
Napier - the buildings are rather pretty and you can go to these kind of 'remember the earthquake' places. Try the beaches there too!
Wellington - again try the nightlife. And it's the arts capital of New Zealand. And Te Papa is actually really good. You might not want to go just because it's a museum, but it's really quite amazing.
And I don't know anything about New Plymouth!
Hope that helps, and have an awesome road trip!!
