I have lived in Spain many years and initially rented for a couple of those years. I came to Spain with my daughter then 21, not knowing where we were gonna stay, arrived in Torremolinos and got a months rent in a holiday apartment block for a reduced rent as I wanted to stay for a month, the owners were Brits. We then hunted for long term accommodation and finally moved into our apartment.
I don't now about the areas you want as I live in the Costa Blanca, but one thing I can tell you is that usually it works like this:

Usually owners want 1-2 months rent as security, separate from your monthly rent all up front.
So you are looking to pay say 1- 2 months security deposit
plus 1 month rent in advance
If you rent from an estate agent, you will usually pay up to 1 months rent commission to them also. So it can be a hefty start when renting.
Utilities are usually separate, and some owners also want you to pay the community fees as well as you will be the ones using the community pool/parking for example, but you could argue that point as the owners are liable to pay this charge as they own the property.

Don't be fooled by agents or owners that you can rent for 11 months and then re rent, this breaks the contract and years and years ago this was one of the ways of getting people out in high season. The law now is that you can rent for the whole 12 months up to 5 years continuously, but with the proviso that at the end of every year this is revised sometimes with rent increase due to utilities going up, or the cost of inflation etc.
If you don't understand written Spanish get a reputable person to either translate at least read through the contract for you, there may be pit falls. (I have had clients in the past with these kind of problems)
I don't mean to scare you, but I used to be an estate agent and sold, and rented properties for people. One German lady we had was renting her house out through another agent, and she did not understand the Spanish contract she had signed. When her husband died and she wanted to sell it, she couldn't because she had tied herself to the agent for 2 years!!
There are many many honest and reliable people out there in Spain, but as in the UK there are also alot of crafty money makers who prey on people who don't know the system. Just use your own judgement.

Depending on the area, you might want to check out http://www.loquo.com for owner rentals or http://www.catalunyaclassified.com for the costa dorada (although both have big Barcdloan bases).

Try a couple of expat froums and also don't discount the big players like idealista and don piso (onesI would not normally reccomend, but in today's financial climate, who knows?!)
