I was just in Madrid during the summer. I didn't see a bullfight but I went to a museum dedicated to bullfighting. The best place to see a bullfight is actually Seville but I know there is at least one ring in Madrid (Plaza de Toros de Madrid).
The price of your ticket depends on whether or not your seat is in the sun. Seats in the sun are much cheaper than seats that are in shaded areas. The categories are sol (sun); sol/sombra (sun/shade); and sombra (shade). Also, if I remember correctly, Bullfights are only held on Sunday's.

You know, I just wrote this huge long paragraph, and then I reread the question. Next Monday? Bullfighting season begins in April (March, according to Micah's site) and runs through October or November, but there are no bullfights in the winter.
Save it for your springtime trip sometime.
