The weather is going to start to be turning cool, but pleasant. You will be starting into a few rainy fall days, too.

Your are not going to have enough time to do all of those cities. They are quite far apart. Even to do them by car would not do them justice in 2 weeks. I would suggest to pare down the itinerary some. The areas you suggest are gorgeous, but again far apart. You are going to spend many days just in travel.

There are public campgrounds everywhere. When we there ages ago living near Madrid, we camped all over the country. I don't remember talking to one person who ever camped outside of a campground, so I don't know what to tell you about that.

Madrid is my favorite, of course. And I adore Segovia, with its intact Roman Aqueduct and wonderful Roast Suckling Pig. The castle there is beautiful.. It was shown in the movie Camelot with Richard Harris.

No, you can't neither hitchhike nor wildcamp. They are banned activities by law. Of course, you may try them them at your own risk.
Hitchhiking is specially difficult and almost nobody would stop to take you, unless you show your beautiful legs.
Spain is a wonderful country and your trip is fabulous but a fortnight may be just a short period of time.
My advice is not to be tight to a strict planning. Just improvise and stay longer if you visit something interesting...
The weather would be nice but cool. Bring some sweaters and a light coat in case of rain or cold weather.
