It depends on what kind of walk you are interested in, if mountain or more urban, easy to climb, etc.
I know more about the Basque Country. There are walks to different mountains. My favorites are Aizkorri (harder) and Aralar (softer, but depends on where you start).

I've done walks in northern Spain and can recommend absolutely the Camino Trail to Santiago de Compostela. You can do as much or as little of it as you like, and it is inexpensive in terms of food and accomodation. My story with photos is below.

Don´t want to be rude, but do you mean in the province of Gerona/Girona, LLeida/Lerida, Huesca,Navarra, Alava etc etc.
When you arrive, contact the local turist office. They gladly will help you. And for a start look into www.(name of town).es
There are also the Via Verde, former RR lines, now hiking paths. Look them up in www.ffe.es and go to "via verde". they are all over Spain. Try also the pages of the provinces. You will find there the provincial turist office in many cases
