The Spanish lisp is only an accent used in certain regions of spain. If you learned Spanish in the US, or elsewhere, you normally do not use the lisp.
You can say "encima" and sound perfectly normal. I actually find it obnoxious if people are going to exaggerate the lisp.

LatinAmericans, Canarians, and some Andalusians would pronounce it like an s.

And always...when the c is soft. And a z. so...Hace is pronounced Hathe...and hizo = hitho.
And a d, especially between two vowels is a th like in the...(more vocalized) as in Vallodalid...Bah yoh tha lith.
or sometimes it completely disappears...as in Pescao...(pescado).
