I've never seen them used extensively in Spanish cuisine, though. Wonder why?

Where I live they are turning mountainsides into Avocado orchards. It is very big business in this area close to Málaga. Most if not all the avocados here are destined for the American markets, where as other areas are for Europe.

Edit; With respect to Sue, one of the top starters here is avocado and prawns with Andalucian sauce. The avocados are always ripe and the prawns here are huge.

Avocados are common in Spain and in many parts of the world.

I live in the North of Spain, and here you can find avocados in every supermarket. We use them for some salads, but in the south of Spain there are other dishes that include avocados.
