How do I make meat paella no fish at all?

The original paella, in Valencia, is made with meat and vegetables, no with Fish. I use lamb meat, pig meat and chicken meat all together, with some onion, garlic and red pepper, and sometimes tomato sauce. You have to cook all the ingredients with some olive oil before, and then add the rice, then stir, and then add the water or broth, stir and cook everything for 15-20 min.

If you know how to cook a fish paella, it's the same, but using meat.

a real paella does not have any onions in at all. the valenciano is roughly chopped meat ( on the bone). the natural cooking juices come from the meat and bones to produce the caldo( stock).which you then add the rice and veg to. (normally greenbeans/butter beans and red peppers for colour and a bulb of garlic in the middle.then you add the water accordingly.Also it must not be stirred once all the ingredients are in, otherwise you will lose the best bit, which is the lovely sticky, crunchy base that you have to scrape of the bottom of the pan.

You can make "paella" with any mixture of add-ins that you like. Just make it with chicken, or lamb, or just veggies. Basically, to be "paella" it needs to be made in a paella (a special pan. A paella can be made with squid ink for the sauce, instead of saffron, or with noodles, instead of rice.

A classic paella is the rice (about a fistful per person), saffron, a pinch or two or three, olive oil, and tomatoes, onions, garlic, peas and carrots (I CONSTANTLY forget these two ingredients, don't know why), and green and red peppers, and anything else you see fit to add.

So have at it, and get creative!

Without the fish it isn´t a paella, but for an alternative without fish why not make a chicken & chorizo risotto. The link below is a good recipe.
