The official Majorca tourism website says that averages for May are below 20 degrees celsius, on the cooler side for the beach (mid sixties fahrenheit). The good news is that it is the dry season.

The average temperature quoted for Palma in May is 18 degrees, however this is an averageover 24hrs so you could expect daytime temperatures to be in the mid 20's. You will also find that the sun has quite a lot of power to it, so if you are sheltered from any cooling breezes but in the sun, it will feel hotter than that.
I'm sure there will be plenty of people on the beach though perhaps not so many in the sea which has not had long to warm up yet.
There will be a risk of the odd cloudy cooler day.
