I think you are best to be here when looking for bar work. Most of the bars and restaurants only advertise locally....and that can just mean a sign in their window. In Southern Spain I would have to say that you would be unlikely to find one that supplies accommodation as most of the bars/restaurants are small concerns...you could however find someone to share with once you started working.

A few things to take note of...I can only speak for the Costa Del Sol but I think it is more or less the same all over Spain.
1. Hours are very long as there are no official closing times...during the summer it is nothing for a bar to be open until 4am, serving drinks and then re-open at 9am for breakfast...you might be lucky to get an hour or two off in the afternoon, but you will prob be back working again in the evening until god knows when.
2. Work contracts are very rare in the bar trade, you will prob find that you are paid cash in hand. Therefore you will pay no tax or social security. Sounds great, but you will need to make sure that you have adequate medical cover.
3. Bar work in Spain is notoriously badly paid. The average wage is around 5Euros per hour. However, most places share out the tips at the end of the day. These can very greatly from day to day and dependent upon the number of visitors at any given time.
4. Accommodation is very expensive during the summer months. You really have to shop around and is something that should never be done at a distance unless you know the area very well.
5. You really have to get down here and just knock on doors, it really is the only way to find work in Spain.

Not trying to put you off, the way of life is great....you will work twice as hard for half the money but you will have a great time doing it...and a huge bonus is that the sun shines very brightly for most of the year.
