A must stop is PeñÃscola. Try to ignore the urbanistic atrocity of the suburbs and go directly to the old town on the hill.
You can also have a look at the roman ruins in Tarragona.
If for some reason you are still around in June, you can go to Sitges (very near Barcelona) to see the flower carpets for the Day of the Corpus Christi. If not planning to stay for so long, the town is nice to see anyway, and has better beaches than Barcelona.

I'd advise a de-tour around AlmerÃa, visit Roquetas de Mar, one of the best beaches ;) but maybe a little to cold for the beach in May -july is beach season ;)
But there is lot's to see/and do in Valencia
such as the Church and it's fountains in the city
have lunch outside the El Micalet Tower
go to the Ciutat de les Arts i les Ciències
but don't watch Pilota Valenciana xD because pelota vasca /Jai Alai is a better game ;)
there are many towns along the way 4 day's is long enough to do the drive, it is about 10 hours by coach no ? so you should choose two towns to see along the way/to stay in
but don't do to much, or you'll have a tight plan and you might rush one place or be disappointed because of trafic you won't have enough time at another place
