Well, I live in Alicante, not Murcia, but go there relatively often, so I'll help as best I can since no one from Murcia seems to be answering.
The capital of Murcia (region) is Murcia (city).
The language spoken is castellano (castillian Spanish).
Things you can do? Well, my favorite, sadly, is going to the new IKEA. We go there quite often.
There's also an even newer futbol (soccer) stadium and a surrounding mall center right nearby (Nueva Condomina).
So, I guess you could go to a soccer game at the stadium or go shopping and/or to a movie there.
I guess they also recently opened up a new Terra Natura theme park, but I haven't been to it. I have been to the one in Benidorm. It has a water park and lots of animals. The park is divided into different continents and when you enter the area of a certain continent, the decorations change as do the animals and foods offered in the restaurants to match their continent.
I haven't been into the heart of the city more than once, but you can find the typical tourist sites on Wikipedia or similar sites. I'm sure there are museums, cathedrals, and whatnot.
I'm guessing the region exports citrus foods and wouldn't be surprised if they also export pomegranates as I see tons of pomegranate trees on my way to IKEA.
Foods:
Well, like the rest of Spain, rice dishes are popular, as are seafoods. Dried and salted fish (mojama, hueva).
Really, most of the stuff you can easily find on-line. Wikipedia has a bunch of info, more than what I could tell you from personal experience. If you need clarification about what you read, post it as additional info so we can help.
Oh- I forgot, for foods/exports.
There's also a lot of olive trees there, so I'd guess they export olives and or olive oil.
They also export a type of goats milk cheese that is dipped in red wine. I've even seen it in the US.
