There are Paradores all over Spain. They have restaurants, which are often very romantic, with lovely views. There are lists on sites like this one: http://www.paradores-spain.com/
Many of them are castles. Almost all are some sort of historic building with a romantic past.
The one in Granada, which is home to the Alhambra, far and away, one of the most beautiful palaces in the world, is a monestary, and is right across the street from the Alhambra. Unfortunately, there are no restaurants at the Alhambra, and since you will probably spend half the day standing in line and visiting, you want to bring a picnic lunch (which can be pretty romantic, too).
Also in Andalucia: Arcos de la Frontera, Ronda, and Carmona all have lovely Paradores with beautiful views. All three are at the highest points of the villages, and have vast commanding views of the countryside. I'm pretty sure the one in Arcos was a castle, though my memory is faint...it was many years ago. Might have been a monestary or convent. |

If you check with Spanish national tourist offices in your area, you can probably get a list of paradores, which are state-run hotels that in many instances are situated in old castles. I've never been to one, but from what I've seen of them in the guides, you shouldn't have trouble locating one. Of all the places that I've been, La Alhambra in Granada is the most beautiful. I believe there's a parador there. Jaén also has one. |

I know two castles with restaurant. First one is Parador de Jaen and the other one is Castillo de Almodovar (Cordoba). But, not being a castle, I would try the Parador de Ronda in Malaga province. |

Paradores are where you will find romantic castle restaurants. Invariably the settings are stunning, however, that isn't often the case with the food. It is also very expensive. It really depends on where you are looking in Andalucia. I live in Andalucia but it would take anything up to 4 hours to drive from one end to the other.
