We booked a flight for the 19th july. the first possible spains consulate visa appointment we could get is on the 29th JUNE. omg, we can still make it right?

You cannot go to another consulate. Although Schengen tourist visa are valid to 25 countries they still must be applied for at the embassy of the country which is the main destination and the consulate which covers the place of residence of the applicant.
Whether you will get it in time depends on your citizenship. If you should hold a citizenship which requires prior coordination with all other Schengen countries before the visa issue it will take four weeks processing time, if not you should get your visa in time. Check the attached link whether your country has the footnote ¹ added. Depends on where you are coming from...
If it is so important try checking to see if there is another consulate in your country and try going there. Make sure you have all your paperwork. Have you gone into the embassy during visiting hours to let them know the situation yet?
