I just got back from studying abroad in Mexico and Im feeling that right now, but its not half as bad as what I felt when I got back from spending a summer in Spain my during my sophomore year of college because spain is SO MUCH BETTER. Everyone handles things differently but I'll just tell you how I get over it.
First - I have to keep the memories near because I am so proud of them. Did you bring back any decorations or abanicos (the painted fans) from Spain? Make sure you redo your living space to display these things and put some pictures up.
Second - Keep life just as exciting where you're at! Join a salsa dancing class or a salsa club. Bring homemade paella to work. Concentrate on the people that you love that are only available to you HERE in the good ol US of A!
Third - Even if you dont "think" you'll ever visit again, TELL yourself that you WILL. Dont let it be goodbye forever. Make a goal of going their again someday, or somewhere else... ya never know what will happen.

I use to be the same way but with school.
I eventually just had to suck it up and push myself to get out of it.
Just think that if you want more days like that you have to keep working like normally.

Your no different to anyone else, but surely you have a life at home to enjoy. If you were on holiday all the time you'd soon get fed up, though I must admit I live in Spain and I'm not fed up.
