Here in the Canaries there are one or 2 shops that say you can pay in sterling but it is usually for alcohol and tobacco. In the tourist areas you might find one or 2 but it is not general

You can still use pounds in the Spanish region of Gibraltar that has been illegally occupied for many years. Big hotels in other parts of Spain may accept pounds, but the exchange rate you will get will be poor.
