What is typical from Spain is the Spanish-muslim architecture, especially in Andalusia, but also in Murcia, Aragon...
The mudejar art: that is the one made by christians following the moorish style.
The flamenco, the sevillanas, the Spanish guitar and all the Spanish gypsy culture.
The tapas culture, the vibrant nightlife (including the Botellon phenomenon, that is a group of people that get together on a square, park, for drinking before they go to the discos)
The bullfighting and the running of the bulls
The passionate Holy Weeks and christian tradititions
The New year's eve (we call it "Noche Vieja" or "old Night") and we take 12 grapes (one from every stroke of the bell of the last 12 seconds of the year ---> 12 seconds, 12 strokes, 12 grapes)
The timetables (due to our relatively warm weather, we do things later than in most European countries)
The after-lunch/dinner conversations (very typical)

You won't find flamenco any better than in Madrid and Barcelona, but the roots are in AndalucĂa, and you can see the up and coming dancers there, as well as those who refuse to be bought by the big city and the "advantages" of them...Granada was especially neat! We went to a show in a gypsy cave, the performers were family members (I imagine more than one family, but the show was very intimate)...the originators of the style. Because the places are small, it is very intimate. I even got to eavesdrop on a conversation of people who were discussing the fine details of the differences in style between the various cities in the South. VERY neat!
The architecture is as varied as the countryside in Spain...in the north there are certain styles that are more typical. In the south, you will find lots of little whitewashed towns and tons of Arabic influence from the Moors.
Every town and city has their own festivals. Catholicism, while dying somewhat as the national religion, still has an incredibly huge influence on the festivals and their way of doing things. TONS of Catholic festivals...saints days, etc. You can be in the middle of your vacation, and everything will shut down for a day. Boom! Some special saint or another.
Feria de Sevilla - everyone trots out their flamenco clothes and dances the Sevillanas and drinks sherry all night long.
Feria de Jerez - is ostensibly a horse fair. I've never been, but the photos look much like those from Sevilla.
Patron saints for every town large enough to have a grocery store.
RomerĂa de RocĂo - starts in Sevilla at the beginning of June and winds its way toward the coast (I think) West of Cádiz.
