Oxtail soup (rabo endiablado)
Tripe (callos a la Madrileña)
Tapas (hors'd'oeuvres)
Angulas
Rice and pork short ribs.

Beyond the normal answers such as Tapas, gazpaucho, paella, etc. Don't forget to try the vino (wine) and of course Sangria!! Go to a local cafe and order a glass for about 1-2 euros.

The most famous is the Paella, but in it´s tipical from the coast of Spain, like Valencia.
In Madrid the tipical food is Cocido.
In Barcelona: Fidegua.
In Galicia: Marisco.
In Andalucia: Tapas, is like different food with bread.
The food is diferent if you are in diferent towns.
