Madrid, is a great city and plenty to do.
You start the day by going to the local bar/cafe and get coffee and croissant, sit outside to do plenty of people watching.
Go to retiro park, don't miss the monument to the fallen angels (only one in the world); mid day stop at a local restaurant order the daily menu (menu del dia); after lunch spend the afternoon at museo del prado (next to retiro).
early evening stop by for a for drink/wine/beer/cubata etc. then at twilight start your walking tour tasca hopping (plaza mayor/puerta del sol). 10 PM have dinner (if you are still hungry) and around midnight go see a flamenco show or go to any of the many night clubs around the city.

Museums, parks are too numerous to mention, go to El rastro on sundays (flea market, be aware of pickpockets) drive to Toledo, Avila, Segovia, El Pardo, Valley of the fallen etc (all within few hours driving) Attend a bullfight if you don't mind blood and gore.

Best of luck!
