What is this Spanish food?

I studied abroad in spain this summer and I would like to cook a few of the meals i had for my family. I don't know what they are called though. any help?

the first is a really good potato soup with chicken in it. the broth is red/orange and there are chunks of potato in it. my host mom told me you cook it with the paella spice for the color and you cook it with liquor and other things i dont remember.

the 2nd is a really good mashed potato dish with spinach in it. its very very creamy and sweet tasting.

anyone have recipes or names of the food?

this is the only chicken type soup i could find that is considered a traditional spanish soup.

this recipe could be altered to have spinach

Ooooooooooh! Those sound good!

My fave was Cocido Madrileño...light broth with chickpeas in it...and lentil soup...pretty standard style.

I have learned to ask the cook for recipes, whenever I´m in a home abroad. Makes recreating them a bit easier.

The paella spice is azafran (saffron), but most people can't afford that so they use turmeric.
The mashed potato dish could quite easily be sweet potatoes and spinach mashed. Sweet potatoes are popular here in Spain in certain areas.
If I had to choose a favourite dish I would probably choose "callos". The original callos dish is made from chick peas & tripe, but many places just used cerdo (pork) these days. It is a winter dish and there is nothing better for lunch on a winter's day.

I think I had that same soup as you... I know that the color would come from saffron, the most expensive spice in the world, which is also that ingredient in paella. Sorry I cannot help much!

How did you like jamón ibérico?
