Spain has some of the best vegetables in Europe, that is one of the reasons Spain exports so many veggies...
You will find almost any kind of fruit and vegetable your heart can desire... And spanish cooking uses an enormous amount of vegetables.
Just specify that you want vegetarian recipes, you shouldn't have any problem.
Enjoy your visit... and bon appetit!
If you are an ovo-lacto-vegetarian.... The spanish make great omelettes: "Tortilla española" is one of our main dishes (potato and onion omelette).

Try checking out the vegetarian and veg-friendly restaurants listed on VegDining.com. Here's the link for Spain:

http://www.vegdining.com/GetRestList.cfm?rgk=EU-SPA

There are at least 40 listed. Both Madrid and Salamanca have at least one vegetarian/veg-friendly restaurant in the city.

Good luck, and enjoy your trip!

They use all kinds of beans in stews. Rice. Gazpacho (cold vegetable soup), potatoes -- bravas, salad (tapas) , cheese, omelets, etc.

Mody
I've been almost vegetarian for around a year (I'm very disgusted by eating meat now, but I think it's meaningless and I force myself to eat meat now and then). There is no problem being vegetarian here, tons of delicious veggies wherever you go. Pizzas, pastas, rice, beans, Gazpacho, potatoes, lasagnas and more are available everywhere.

Suerte.

Lots of fish, rice and vegetables. You should not have any
trouble because the climate is so good there is always an
abundance of fresh produce. Europeans are not so hooked
on eating red meat as North Americans are so they eat differently, smaller amounts and lighter.

I recommend you eat meat. We have canine teeth. That's what they are for.
